From Farm to Snack Bowl:The Journey
of
Plantain Chips
• Introduction
Plantain chips are the most popular plantain products in Nigeria. Plantain chips are spherical or elongated-shaped deep fried products of matured plantain fruits at the firm ripe stage. The color is brownish-yellow, the texture is crispy and the taste is slightly salty.
• PROCESS OF MAKING
1. Peel the skin off the plantains.
2. In a separate bowl mix salt,red chilli powder and water to give a spicy flavour.
3.Heat oil in a pan over low to medium heat.
3. Using a chips cutter slice the plantains directly into the oil so that chips does not stick together and seperates automatically.
4. Fry the plantain chips until they are dry.
5. While it is cooked upto 75% sprinkle the salt chilli water mix into the oil so that it will quickly absorbed by the chips
6. Dry the chips and add asafoetida powder to it.
7. Serve the chips.
• Origin of Plantains (Fields of Kerala)
Plantains are believed to have originated in Southeast Asia and were domesticated in India. The Malabar region of Kerala is thought to be the origin of bananas that were taken to East Africa by Arab and Muslim traders.
Varieties of plantains in Kerala are Nendran, Changalikodan,Njalipoovan,Palayamkodan.
