Sadhya



 

sadhya, is a meal of Kerala origin and of importance to all Malayalis, consisting of a variety of traditional vegetarian dishes usually served on a banana leaf as lunch.Sadya is typically served as a traditional feast for Onam and Vishu, along with other special occasions such as birthdays, weddings and temple festivals. Usually has 20–30 dishes, but can have up to 64 or more.It is a grand feast that consists of a variety of dishes, including rice, lentils, vegetables, and payasam (a sweet dessert).


A traditional Sadhya menu typically includes Traditional Dishes:


1. Parippu: Lentil soup 

2. Sambar: Lentil-based vegetable stew made with split red lentils, vegetables, and spices.

3. Avial: Mixed vegetable dish made with a variety of vegetables, coconut, and spices.

4. Thoram: Stir-fried vegetable dish made with cabbage, carrots, beans, and spices.

5. Pachadi: Yogurt-based side dish made with yogurt, cucumber, ginger, and spices.

6. Inji: Ginger and tamarind-based side dish made with ginger, tamarind, and spices.

7. Payasam: Sweet dessert made with milk,     sugar, and spices.

8.ghee(Clarified butter)

9.Rice

10. Papadam (Thin, crisp flatbread)etc.


Cooking Process:


1. Rice preparation: Cook the rice in large quantities, using traditional methods like steaming or boiling.

2. Sambar preparation: Cook the sambar, a lentil-based vegetable stew, in large quantities.

3. Avial preparation: Prepare the avial, a mixed vegetable dish, by cooking the vegetables in coconut milk and spices.

4. Thoran preparation: Prepare the thoran, a stir-fried vegetable dish, by cooking the vegetables in oil and spices.

5. Pachadi preparation: Prepare the pachadi, a yogurt-based side dish, by mixing yogurt with cucumber, ginger, and spices.

6. Inchi preparation: Prepare the inchi, a ginger and tamarind-based side dish, by cooking the ginger and tamarind in oil and spices.

7. Payasam preparation: Prepare the payasam, a sweet dessert, by cooking the milk, sugar, and spices.


Pre-Preparation:


1. Menu planning: Decide on the dishes to be included in the Sadhya menu.

2. Ingredient sourcing: Source the freshest ingredients, including vegetables, fruits, and spices.

3. Cooking vessel preparation: Clean and prepare the traditional cooking vessels, such as the "uruli" (a shallow, wide-mouthed vessel).
