In my locality, The Residency handmade organic jaggery (commonly known as Gur) is a traditional sweetener that has been used for centuries. It is made from sugarcane juice, which is boiled, thickened, and then moulded into blocks. Unlike refined sugar, jaggery retains essential minerals and vitamins, making it a healthier alternative.

How Jaggery is Made

The process of making organic jaggery involves the following steps:

Extraction of Sugarcane Juice – Fresh sugarcane is crushed to extract the juice.

Boiling – The juice is boiled in large open pans over a firewood furnace to concentrate it.

Clarification – Natural agents like lime or tamarind pulp are added to remove impurities.

Thickening – The juice is stirred continuously until it reaches a semi-solid consistency.

Moulding and Cooling – The thickened liquid is poured into Molds to solidify into jaggery blocks.

Advantages of Jaggery Production
